Japan> Ibaraki. Brewed at Huchu Homare (est. 1854) using the ancient Watari Bune rice — a parent strain of Yamada Nishiki, revived from seed after going extinct for 60 years. Polished to 55%. Ripe pineapple, melon, banana, bright acidity, delicate effervescence. A piece of sake history in the glass.
