Delicate savory notes weave through the fruit, while hints of fresh-tilled soil, vanilla and minerality bring beautiful depth – exactly what makes this variety such a natural companion for all things Italian. 14 days fermentation on skins. Punched down twice daily with select pump-overs and mid-fermentation delestage. Aged 16 months in 15% new French oak. 14.1% ABV
