Still Hollow Corn Whiskey with Maple Barrel Resting

We release less than 600 bottles of this unique corn whiskey per year. We take our buttery smooth 100% bloody butcher corn whiskey and age it in 3rd use 10-gallon white oak bourbon barrels that also housed local maple syrup. The barrels are first used for making our bourbon whiskey, after the bourbon is emptied, they are filled with pure maple syrup for several months, and after the syrup is emptied, they are re-filled with corn whiskey. Not overly sweet, this whiskey retains its corn notes and picks up the subtle essences of maple and bourbon that have soaked into the barrel. This is a super smooth sipper on the rocks or can be a star in a cocktail. A collaboration with our neighbors at Spruce Knob Maple, this whiskey is a wild and wonderful taste of Appalachia!
