Rustico Sotol Hacienda De Chihuahua

Hacienda De Chihuahua Rustico Sotol is an unaged expression of sotol, a spirit distilled from the Dasylirion wheeleri plant (desert spoon) found in the Chihuahuan Desert. It is made from 100% wild-harvested Dasylirion plants, which take approximately 15 years to mature. Master distiller José Daumas Gil de Partearroyo oversees the production, which includes slow cooking the plants in steam-heated ovens, natural fermentation with champagne yeast, and double distillation in a double-column copper still. After distillation, it is immediately bottled. The “Rustico” designation suggests a more direct and less processed expression of the spirit.

Tasting Notes:

• Aroma: Often described as having a delightful aroma with notes of desert vegetation and sometimes a wet, earthy scent reminiscent of desert rain. Some detect citrus and a minty, vegetal quality.
• Palate: Described as lovely and mild on the tongue, with a light melon and grassy flavor, sometimes with a hint of smoke. Some note a light sweetness initially, followed by a dryness, and a possible slight burn at the end.
• Finish: Generally rich and smooth, with a light spice and oak on the transition, sometimes with a mineral, oily mouthfeel and a touch of warmth.
