100% Chenin Blanc from the Pinon’s oldest plot planted in 1945, and vinified in their oldest barrels. Fermentation lasts 2 to 3 months with indigenous yeasts, and it is aged in barrels 4-5 months. Baked apple, honey, & flowers lead to smoky/mineral notes with a touch of nutty bitterness on the finish.
