Made from 100% Espadín agave (Agave angustifolia), it undergoes a traditional production process: roasting in earth pits, tahona milling, fermentation in wooden vats, and triple distillation in copper stills. During the third distillation, a blend of local fruits and spices is added, and a raw chicken breast is suspended in the still, imparting unique savory and aromatic qualities to the spirit. This mezcal is produced annually in batches of no more than 500 liters, making it a rare and sought-after expression
