Ponfeigh finishes this gin for several months in freshly dumped barrels that held our rye whiskey. The Gin has botanicals of angelica, coriander, juniper, lemon peel, licorice, and orange peel that are a pleasing accompaniment to the spices it receives from the barrel. The barrel imparts sweetness and body to the spirit, giving it a light caramel color. The Gin rolls out of the glass with a creamy mouthfeel and a palate of honey sweetness, subdued juniper, and Rye spices.
