Les Terres D’Illite Champagne 2020 Mousse

Made from organically cultivated Meunier 80% and the 20% Pinot Noir, the 2019 Champagne” Les Terres D’Illite” takes its name from the green clay soils unique to Cuisles. This special clay, known as “Illite” (which is used in cosmetics) gives the Meunier at this benchmark domaine an almost Chardonnay-like quality, with a lift and texture not often seen with this red variety. Primary fermentation and malolactic fermentation took place in stainless steel. The wine was then aged three years on the lees and disgorged with dosage of 2g/L.
