Agave convallis, which is used to make jabalí, is challenging to work. Taking 14-16 years to reach maturity in the wild, the piñas have a low yield, and during fermentation and distillation, the bagasso produces a lot of foam, which needs to be monitored and removed. These are José Alberto’s first batches, and the results are outstanding. Produced Oct 2021. 190 bottles.
